PROVIDENCE – We are now in the middle of the Lenten season of penance and reflection, and faithful Catholics are doing their best to avoid eating meat on Fridays as a discipline of long tradition and standing.

Beyond the tuna fish casserole, the tomato soup, the scrambled eggs, is there life on the breakfast, lunch and dinner table?

Rhode Island Catholic invites those with favorite meatless recipes to submit them, together with a brief description like “Aunt Millie created this dish when her six kids refused the mac&cheese-in-a-box dinner and sneaked off to McDonald’s in the middle of the night.”

We’ll print the best offerings, the ones that make our mouths water and put away the can opener that had been poised over tuna fish.
